    FOUNDER

    Kenny has spent the last 10 years working for a prominent Steak House in London. Tasked with taking care of Operations, looking after the GP’s and improving the business in General, covering all systems and human elements, a skill set evolved that gave birth to 101, and its ethos.

    After almost 30 years in hospitality (and beyond), running business of all types and sizes, namely pubs, bars, nightclubs, cocktail venues, restaurants, events, festivals and pretty much everything in between, a bank of knowledge and contacts has been built up that can assist in making your business or personal circumstances better equipped for the road ahead, whatever that be.

  • James Hopkins

    BUSINESS DEVELOPMENT

    James is currently a Non Exec for the business he started, set up and grew, LCC bars.

    His experience in the field of Hospitality is hard to match. From menu design to the formulation of a PLC, strategic recruitment system design to the nuances of a pro active procurement policy, James has covered almost every inch of how to run a business, and run it as a huge success.

    We’re very lucky to have James on the team. His mentorship and coaching in this industry alone is an extremely rare commodity to be able to offer.

    DRINKS DESIGN

    Hamish (Ham), with his 15 years in the bar industry, is a specialist in contemporary mixed drinks, hospitality and generally all things boozy. His expertise in spirits, cocktail bar operations and consumer/bartender training have made him a prominent figure in the drinks industry.

    His cocktails and the bar teams he has led have won multiple awards (Tales Of The Cocktail Best Restaurant Bar, Timeout Best Bars, Timeout Best Happy Hour, London Cocktail Week Best Cocktail) and his drinks and articles have featured in The Guardian, Evening Standard, ES Magazine, as well as many other notable drinks publications.

  • Carly Foxwell

    DRINKS BUSINESS

    Carly is a drinks brand expert with a specialism in the on trade channel. With 18 years of experience in the drinks industry working across international brands including Red Bull, Russian Standard and Champagne Lanson, Carly’s expertise spans commercial management, trade marketing and trade partnership strategy.

    Since founding her consultancy, Fox in the Well, in 2019 Carly has been using per unparalleled knowledge of the UK’s drinks market to advise brands ranging from starts ups to well established players on commercial growth strategies and value creation. These include Wray and Nephew Overproof Rum, Regal Rogue Vermouth and brands across Distill Ventures’ Pre-Accelerator programme.

    FOOD BUSINESS

    David has been responsible for running several businesses in his 25 years in hospitality. He has opened and run multiple venues for a prominent UK Steak House, and has turned the fortunes of numerous smaller venues across the capital.

    David has a history in design, events and marketing, which adds to his unique perspective, and he is always keen to focus on the impact of business on the local and wider reaching community.

    Having worked every position, from GM to Head Chef, and everything in between, this gives him a unique perspective of both sides of the pass.

    FOOD DESIGN

    Mr Brown’s record in the industry speaks for itself, responsible for several Michelin Stars, he sits alongside his past colleagues (can we name them?) as the representation of the top tier of the cooking world today.

    There are few cuisines that Mr Brown is not familiar with, and it is this expanse of culinary experience that fuels an unmatched creativity in menu and dish creation.

    Currently in his eighth year working with a prominent Steak House in London, Mr Brown’s commitment to growth and training in the sector is second to none.

  • Naomi Cook

    RESERVATIONS SYSTEMS

    Naomi is a specialist in maximising the reservations side of a business, ensuring that every part of the end to end guest experience is excellent, is continually reviewed, and improved upon.

    Her understanding of this area puts her in a unique position to understand the architecture that is actually required in order to execute a successful reservations experience, and the hardware and software used in today’s market to make that a continued success,

    Naomi has been active in designing and installing the networks and systems required to achieve success, maximising covers and profitability, whilst also being at the forefront of providing an incredible guest experience. Having operated all of the major systems that would have come through the hospitality sector over her career, she has gained an expert opinion on how these systems operate on their own, and when mixed with others.

    Her experience is supported by working, managing and operating many venues before becoming specialised in this area, and that only furthers her wealth of experience, leading her to being an invaluable member of any operation.

  • Tom Gell

    SYSTEMS SUPPORT

    Tom has been tirelessly making the wheels turn for business such as Canteen, Spiritland, Happy Face, Merchant’s Tavern and Murano over a career spanning 16 years.

    He is adept at working along side the service side of the hospitality industry to make sure That the systems that are deployed in those venues are actually functional for the people who need to use them, a vital component of any hospitality business set up. This is the back bone of 101, and therefore it is a huge deal for us to have him onboard.

    Tom’s talents are not restricted to one area, as with all the 101 Team, as he is more than capable to assist in the technical and aesthetic deign of any venue.

  • Gemma Barter

    DIGITAL MARKETING

    Gemma has 6 years Digital marketing experience working for some of the highest turnover restaurants in the sector. Currently plying her trade with an extremely well know and respected burger led restaurant group, Gemma is being given the freedom to join the 101 Team, and find her feet on her own merit.

    She specialises in transmitting your brand, culture, experience and social media avertising presence across all major platforms, TikTok, Facebook and Instagram, utilising these platforms for the greatest returns possible. However specialising in social media advertising is not a the limit of Gemma’s skill set.

    On top of socials, Gemma is versed in all formats of Digital Marketing, from the aims and processes of marketing emails, auditing websites for brand effectiveness and user experiences, to optimising your site with proven SEO techniques.

    In helping with getting you started on your digital marketing strategy she has the ability to demonstrate return of investment in social and digital for any size and pitch of brand or venue.

    DESIGN CONSULTANT

    James is the owner/head designer at END. CREATIVE. with over 20 years of design experience James has produced worked for many high-level international clients. From a simple logo to a entire brand consultancy James has it covered.

  • Matt Wells

    IT

    Mr Wells is the owner operator of an IT company called Letsma. With well over 25 years experience, many of those in tandem with the hospitality industry, Matt understands some fundamentals that are often missed in that industry with regards to IT.

    It is with great pleasure that we are able to offer his service as a part of the 101 Model, his services are of the highest standard from our 10 years of working alongside him.

  • Julian Bicknell

    WINE BUSINESS

    After starting his wine journey with a prominent London Steakhouse, as Sommelier and buyer for one of the busiest sites in the country, Julian was also able to complete his WSET as a trainer. This led to a role as Group Wine Trainer, looking after all the existing, and new business opportunities.

    From here Julian moved to Bibendum, specifically the premium on-trade sales team, looking after premium restaurants and independents for a 5 year tenure.

    Moving into consultancy became a logical progression to Julian's extended product knowledge, and his ever growing contact sheet, as his experience allows him to understand the full scope of the industry – in sales, but also with the understanding of a buyer and sommelier. He takes pride in guiding clients to create the best wine lists and makes understanding wine accessible and enjoyable to all.

  • Ross Wakefield

    SOUND SCAPING / MUSIC DESIGN

    The effect of music on a hospitality has long been ignored by hospitality. Poor equipment, badly passed, with the wrong content, can have as much if an affect as a cold greeting or a warm glass.

    To ignore this sense in the midst of stimulating all of the others seems like an incredible oversight.

    A music industry professional for 30+ years, Mr Wakefiled has been a live performer, the South prominent scratch master flex, a producer of sounds for film, TV, Podcast and the internet. His knowledge of music and the perception of that music by the public is second to none.

    Mr Wakefiled’s services for 101 are varied, from picking a musical score to enhance your dining experience, to sound scaling an entire venue, to making bespoke content for marketing.

  • Grace Lord

    HR

    Grace began her career within operations as General Manager of a diverse range of restaurants and bars across London and the south coast. She has since moved into Human Resources, using her operational knowledge and experience to guide managers within this rapidly changing sector of the hospitality industry.

    With an in-depth knowledge of HR policies, employment law and employee relations, Grace has specialist expertise in recruitment & performance management, training & retention, diversity and inclusion.

    Offering advice and guidance in areas such as benefit management, increasing employee engagement and writing new policy documents and contracts, Grace is on hand to deliver comprehensive HR training to management teams, giving them the confidence and support to run fully-compliant HR models within any hospitality business.
